PANGASIUS FILLET IN THE OVEN

INGREDIENTS:

  • 1 package (800 g) of Pangasius fillets, Lanaras
  • 2-3 potatoes cut into round slices
  • 2 carrots cut into round slices
  • 300 g grated tomato
  • 1 onion cut into round slices
  • Fresh thyme or oregano
  • 1/3 bunch of parsley, finely chopped
  • 2-3 cloves of garlic, finely chopped
  • 1 green pepper, finely chopped
  • 150 ml olive oil
  • Salt and pepper

DIRECTIONS:

Spread the potatoes, carrots, onions, pepper, garlic and tomato in a baking pan, sprinkle with a little thyme or oregano and parsley and season with salt and pepper. Save some herbs for the fish. Toss well and place the ingredients in a single layer. Add 200 ml water or white wine and bake for 20 minutes. Season and sprinkle with herbs the defrosted pangasius fillets then place them over the vegetables. Bake for a further 10 minutes.
