
MUSSELS SAGANAKI

INGREDIENTS:
- A bag (500 g)of mussels meat, Lanaras
- 1 green cubanelle pepper, seeded and chopped
- 1 onion, finely chopped
- 1/3 bunch of parsley
- 2-3 cloves of garlic, finely chopped
- 200-250 g feta cut into cubes
- 100 ml olive oil
- 100 ml white wine
- 50 g mustard
- Juice from one lemon
- Oregano, salt and pepper
DIRECTIONS:
Heat the olive-oil in a non-stick skillet and sauté the onion and pepper for 4-5 minutes over low heat. Add the mussels, garlic, salt, pepper, oregano, parsley and cook for a further 2-3 minutes. Then add the wine and mustard bring to a boil and simmer until the sauce has thickened. A minute before removing the skillet from heat add the feta and lemon juice, toss and serve.
