FRIED SALT COD WITH GARLIC POTATO PUREE

INGREDIENTS:

  • 1 package of salt cod, Lanaras
  • 1 L sunflower oil for frying

For the batter:

  • 500 g all purpose flour
  • 1 can of lager beer (at room temperature)
  • A little salt

Mix all the ingredients in a bowl and set aside until the yeast starts to bubble.

For the puree (skordalia):

  • 2 potatoes boiled and mashed (puree)
  • 1 stale bread. Remove crusts from bread and soak in water. Squeeze the water out of the bread
  • 150 g nuts pulverized in a food processor
  • 4-5 crushed cloves garlic
  • 50 ml vinegar
  • 100 ml olive oil
  • Salt

Mix all the ingredients

DIRECTIONS:

Place the defrosted salt cod on paper towel to absorb as much moisture as possible. Heat the sunflower oil in a pot. Cut the salt cod in pieces, dip them in the batter and fry until golden brown on each side.
