FRIED SALT COD WITH GARLIC POTATO PUREE

INGREDIENTS:
- 1 package of salt cod, Lanaras
- 1 L sunflower oil for frying
For the batter:
- 500 g all purpose flour
- 1 can of lager beer (at room temperature)
- A little salt
Mix all the ingredients in a bowl and set aside until the yeast starts to bubble.
For the puree (skordalia):
- 2 potatoes boiled and mashed (puree)
- 1 stale bread. Remove crusts from bread and soak in water. Squeeze the water out of the bread
- 150 g nuts pulverized in a food processor
- 4-5 crushed cloves garlic
- 50 ml vinegar
- 100 ml olive oil
- Salt
Mix all the ingredients
DIRECTIONS:
Place the defrosted salt cod on paper towel to absorb as much moisture as possible. Heat the sunflower oil in a pot. Cut the salt cod in pieces, dip them in the batter and fry until golden brown on each side.
