STEWED OCTOPUS WITH MACARONI

ΥΛΙΚΑ:

  • 1 medium-sized octopus, Lanaras
  • 1 onion, finely chopped
  • 2-3 cloves of garlic
  • 300 g grated tomato
  • 30 g tomato paste
  • 500 g ditalini macaroni (short pasta)
  • 800 ml water
  • 150 ml olive oil
  • 2-3 laurel leaves
  • 5-6 grains allspice
  • Salt and pepper

ΕΚΤΕΛΕΣΗ:

Defrost the octopus and remove the beak (mouth) through the little hole between the tentacles on the bottom side of the octopus. Rinse. Cut it in bite size pieces. Pour the olive oil in a pot and sauté the onion. Add the octopus and simmer for 2-3 minutes. Cook for a further 2-3 minutes and add the grated tomato, tomato paste, garlic, laurel, allspices, salt and pepper. Cook for 40 minutes. Pour water in a different pot, salt it and cook the pasta until still al dente. Drain, add the pasta in the sauce and mix to coat.
Tip: You can boil the pasta in the sauce but you need to stir every 3 minutes, making sure it doesn’t stick to the bottom of the pan. Although, stirring too often can break down the pasta so the first way is safer.
