ARTICHOKES WITH PEAS

INCREDIENTS:
- 750 g frozen artichoke hearts, Lanaras
- 450 g frozen peas, Lanaras
- 2-3 medium-sized potatoes, peeled and cut into cubes
- 2 spring onions, thinly sliced
- 1 onion, finely chopped
- 2-3 carrots cut into round slices
- 1/3 bunch of dill, finely chopped
- Juice from one lemon
- 30-40 g cornstarch
- 100 ml olive oil
- 800 ml water
- Salt and pepper
DIRECTIONS:
Pour the olive oil in a pot and sauté the onions until soft. Then add, every 2-3 minutes, the carrots, spring onions, potatoes, artichokes and peas and cook over low heat. Add water, salt and pepper bring to a boil, then lower the heat and simmer for about 20 minutes. Add the chopped dill, lemon juice and cornstarch, previously dissolved in ½ glass of cold water. Cook for 10-15 minutes. .
